The easiest homemade quesadilla recipe ever.

Serves: 1
Prep Time: 5 minutes
Cook Time: 5-6 minutes
Ingredients:
1x 10-inch flour tortilla
½ cup (52g) Monterey Jack cheese, grated, 2 tablespoons (14g) set aside
½ cup (52g) Cheddar cheese, grated, 2 tablespoons (14g) set aside
Method:
Pre-heat a non-stick pan or griddle over medium heat. Separately, place the tortilla over an open flame to soften a bit and make pliable.
Fill half your tortilla with the ½ cup and Monterey Jack cheese and the ½ cup of Cheddar cheese. Fold over and press closed.
Place the 4 tablespoons of reserved Monterey Jack and Cheddar cheese directly on your pan or griddle. Place your folded tortilla down onto the shredded cheese, which will create a cheese crust.
Cook until the cheese on the pan or griddle is crisp and using your spatula, scrape aggressively underneath the cheese and flip your tortilla. Cook for another 2-3 minutes until golden brown and the cheese inside is melted. Cut into wedges and enjoy.
