3-Ingredient Red Curry Pork Chops

The easiest 3-ingredient red curry pork recipe ever.

Serves: 2
Prep Time: 5 minutes
Cook Time: 10 minutes
Ingredients:
2x (1 ½ -inch) thick pork chops, cut into 1-inch cubes, fat cap removed
⅓ cup (85g) red curry paste
1x can or 2 cups (480g) coconut milk, full fat unsweetened
Method:
Heat a large saute pan over medium-low heat. Using your hand or a pair of tongs, rub the fat cap around the pan until fully coated in a thin layer of fat. This will be the cooking oil you use to sear the pork. Increase the heat to medium high and add your pork to the pan in one layer, and sear for 1-2 minutes. Flip each piece one time, season to taste with salt, and sear another 2 minutes. Remove the pork from the pan and set aside to drain on a wire rack atop a small sheet pan.
Using the same saute pan with the pork fond intact, reduce the heat to medium and add the curry paste. With a spoon stir the paste around the pan and cook for 1-2 minutes until the paste is dark red. Increase the heat to medium-high, add the coconut milk and scrape the bottom of the pan to release the fond. Bring to a boil, add in your pork, and reduce the heat to medium low and simmer until the pork is fully cooked through, about 3-4 minutes. Serve and enjoy.
