Turns out you can make homemade ramen without JUST following the package directions.
Prep Time: 10 minutes
Cook Time: 10 minutes
Ingredients:
3 packages (390g) Shin Black Ramen (use 3 noodle disks, use 1-2 red and gold seasoning packets, discard the dried vegetable packet)
¼ cup (60g) butter
¼ cup (31g) all-purpose flour
1 ½ cups (355ml) milk
½ cup (118ml) heavy cream
1 cup (113g) cheddar cheese, grated
1 cup (113g) American cheese, shredded or finely chopped
½ cup (57g) Gruyere cheese, grated
Salt to taste
Method:
Bring a large pot of salted water to a boil.
In a deep saucepan, melt the butter over medium heat. Once fully melted, whisk in your flour. Stir and cook constantly for about 1-2 minutes. Slowly pour in milk and heavy cream and whisk. Once smooth and lightly thickened and starting to simmer, cut off the heat and the cheddar, American and Gruyere. Mix until fully melted and incorporated, 2-4 minutes.
Cook ramen according to package directions 3-4 minutes. Then drain.
Fold ramen into your cheese sauce until fully coated. Season with 1-2 ramen seasoning packets, serve immediately and enjoy.
