These aren’t just homemade French fries with cheese sauce.
INGREDIENTS:
Fries:
2 lbs (907g) russet potatoes, peeled & cut into matchsticks
1 cup (150g) all-purpose flour
1.5 teaspoons (8g) fine sea salt
1/4 teaspoon (1g) MSG
2 teaspoons (6g) smoked paprika
1/2 teaspoon (1g) onion powder
1/2 teaspoon (1g) cumin
1 teaspoon (3g) garlic powder
1/2 teaspoon (1g) cayenne powder
3/4 cup (177ml) water
2 quarts (1.9L) vegetable oil for frying
Salt to taste
Fry Seasoning:
1.5 tablespoons (13g) cheddar cheese powder
2 teaspoons (10g) mushroom powder
2 teaspoons (6g) smoked paprika
1/2 teaspoon (1g) cumin
1 teaspoon (3g) garlic powder
1.5 teaspoons (7g) kosher salt
Nacho Dip:
2 tablespoons (28g) unsalted butter
2 tablespoons (15g) of all-purpose flour
2 tablespoons (30g) heavy cream
1 cup (237ml) milk, plus more for thinning
1 teaspoon (3g) fresh ground black pepper
1/2 teaspoon (1g) cumin
1/2 teaspoon (1g) cayenne powder
Pinch of smoked paprika
4 ounces (113g) of American Cheese, grated fresh
4 ounces (113g) Cheddar Cheese, grated fresh
2 ounces (57g) Gruyère, grated fresh
Bell Grande Version:
1 cup (208g) Mayo
3 tablespoons (45g) Valentina Hot Sauce
1 teaspoon (3g) ancho powder
1 teaspoon (3g) garlic powder
Salt & Pepper to taste
1X batch fries recipe
1X batch Nacho Dip recipe
1X Taco Bell Beef recipe
Sour Cream for topping
2 tomatoes, diced
1 ripe avocado, diced
Cilantro for garnish
Finley crumbled Cotija
INSTRUCTIONS:
Fries:
To a pot, add water, season it with salt, and bring it to a boil; add in your potatoes, pull them from the boil and drain them just before they cook through, slightly soft on the inside but still crunchy on the outside, about 3 - 5 minutes. Place them on a sheet tray lined with a paper towel, and place them in the fridge until completely dry and cold.
In a large bowl, combine flour, salt, msg, smoked paprika, onion powder, cumin, garlic powder, cayenne, and whisk till combined. Then whisk in water until smooth; if it is too thick, add more water until you get a consistency of a loose batter.
Fill a large-heavy-bottomed pot halfway with vegetable oil. Heat to 350F, then in batches, gently add your fries to the batter, remove and place on a wire rack to drain the excess batter.
In batches, gently lay them in the oil, and fry for about 3 to 5 min until golden brown and crispy. Remove from the oil, place them on a baking sheet with a wire rack and season them immediately with your tasty “fry seasoning.” (season the fries while hot).
Fry Seasoning:
In a small bowl, combine all the ingredients and whisk to combine.
Nacho Dip:
In a medium saucepot over medium-high heat, add butter; once melted, whisk in flour, stirring often, and cook for 45 seconds.
Add in heavy cream and milk; whisk together until heated and beginning to thicken. (If it gets too thick, you can add more milk) Then add black pepper, cumin, cayenne, smoked paprika, and whisk together till combined.
Then add your American cheese, cheddar cheese, and gruyere cheese (add more milk if necessary.); whisk until all the cheese has melted—season with salt to taste.
Bell Grande Version:
In a bowl, add mayo, Valentina hot sauce, ancho powder, and garlic powder; season with salt and pepper. Whisk until combined and reserve.
Assembly,- Place your fries in a bowl, add as much nacho sauce as you want, and a good amount of Taco Bell beef. On top of that, place a dollop of sour cream, place a few dots of your spicy mayo, some tomatoes, avocado, cilantro leaves to garnish, and finally, some of your fries seasoning on the sour cream and finally (optionally) some crumble cotija.
