INGREDIENTS:
Salted Chocolate Cookie Dough:
1.5 cups (225g) all-purpose flour
1/2 cup (50g) cocoa powder
1 tsp (4g) baking soda
1/2 tsp (2g) baking powder
1/2 tsp (4g) fine sea salt
1/2 cup (115g) unsalted butter, softened
1/2 cup (115g) granulated sugar
1/2 cup (115g) light brown sugar
1 egg
2 tsp (5g) vanilla extract
1 Tbsp (13g) whole milk
Creme Ingredients:
3 ounces (85g) cream cheese
3 Tbsp (42g) salted butter, softened
2.5 cups (350g) powdered sugar
1 vanilla bean scraped of its pods
1/2 tsp (1g) vanilla extract
INSTRUCTIONS:
Salted Chocolate Cookie Dough Method:
Preheat oven to 350f line baking sheet with silicone baking mat
Large bowl whisk the flour, cocoa powder, baking soda, baking powder, salt
Cream butter with the sugar, add the eggs, vanilla extract, milk
Add dry ingredients into the wet and mix till thick and combined
Scoop 1 tablespoon cookie dough into a ball, place on baking sheets 2 inches apart, 12 cookies per sheet
Using the bottom of a greased measuring cup a cookie press, press dough balls halfway down
Bake at 350 for 7-10 minutes, rest to solidify, then transfer to cool the rest of the way on a wire rack
Creme Method:
Very small pinch fine sea salt
Beat cream cheese and butter till creamy, beat in powdered sugar, add vanilla extract and bean pod and salt.
Beat till creamy and smooth.
