So making something like a homemade classic Starbucks Frappuccino seems impossible…well actually it’s not. It’s really easy, you just need some finesse and a little xanthan gum.

SUPPLIES USED:


INGREDIENTS:

Caramel Sauce:

  • 1 cup (218g) granulated sugar

  • 1/4 cup (65g) water

  • 1/2 cup (114g) heavy cream

  • 5 Tbsp (70g) unsalted butter

  • 1 tsp (4g) kosher salt

  • 1 vanilla bean (2g) worth of beans (or 2.5 teaspoons vanilla extract)


Frappuccino:

  • 2 cups ice

  • 1/2 cup espresso or very strong cold coffee

  • 3/4 cup milk

  • 5-6 Tbsp simple syrup mixture OR 1/2 teaspoon dissolved in 1 tbsp of water

  • 4-6 Tbsp caramel sauce (this would need to be dropped If using the simple)


Pink Drink:

  • 1 cup hot water

  • 2 bags hibiscus or açaí berry tea bags

  • 1/2 cups white grape juice

  • Coconut milk (1 cup per 1.5 cups tea)


Nitro Cold Brew:

  • 250ml cold brew…cold

  • 10ml maple syrup or simple syrup *optional*


INSTRUCTIONS:

Roasting Beans Method:

  1. If roasting, place 8oz of desired beans into a roaster and roast at 455F for 15-18 minutes.

  2. Let rest 3 days before using.


Frappuccino Method:

  1. For the caramel sauce, in a medium saucepan add in granulated sugar, and water. Whisk together.

  2. Set over medium-high heat and bring to a boil. Let boil for 8-12 minutes until reduced to an amber color. Whisk in unsalted butter, kosher salt, and beans from vanilla bean pod. Whisk to combine.

  3. Once combined, turn off the heat and whisk in heavy cream. Pour into a container to cool.

  4. For the simple syrup, in a medium saucepan add and combine equal parts water and sugar. Set over medium heat and whisk continuously just until dissolved. Set to the side to cool completely.

  5. Place the simple syrup into a blender and start blending. Add in exactly 6 grams of xanthan gum blend together.

  6. In a blender, add in ice with good espresso (or cold brew concentrate), whole milk, caramel sauce, and xanthan gum paste. Blend until smooth.

  7. Grab a glass, coat the walls with caramel, pour in the frap leaving space to top with whipped cream. Finish the whipped cream off with a drizzle of caramel.


Pink Drink Method:

  1. Feel a small glass with hot water, dunk in a hibiscus tea bag and steep 3-5 minutes.

  2. Remove the bags and add white grape juice with honey to taste.

  3. Pour over ice and top with a generous splash of coconut milk. Stir together and garnish with strawberries.


Nitro Cold Brew Method:

  1. In an isi canister, combine the desired cold brew with maple syrup (optionally). Shake to combine.

  2. Add the lid, twist on a fresh whip it and let sit and erate for 3 minutes.

  3. Slowly extract the cold brew into glass and serve.

Dude, measurements are different in video and written recipe? Is it 218g of sugar or 125g? 60ml of water or 65? Who checks these before posting???

The people from Pará (the state in Brazil that is a real leal to açaí in its original form and made them popular) would freak out over the idea of açaí tea bags. they actually eat it with rice.. at lunch. 😉

the nice cream that the world (and every other state in Brasil) is such a fan is not popular in Pará.
