The Best Cold Cut Sandwich Bites

Have you ever bitten into a sandwich so mind-bogglingly good that you wished it would never end?

Have you ever bitten into a sandwich so mind-bogglingly good that you wished it would never end? No? Well this sandwich is guaranteed to do that.



INGREDIENTS:

  • 2 bunches of fresh basil

  • 1/4 cup (32g) pine nuts, toasted

  • 5 cloves garlic

  • 1/2 cup (50g) Parmigiano Reggiano

  • 1/3 cup (90ml) water

  • 1/4 cup (60ml) olive oil

  • 1 cup (192g) mayo

  • Salt & Pepper to Taste

  • 2 big loaves Ciabatta Bread

  • 3 balls buffalo mozzarella, sliced

  • 1 lb (454g) sliced salami

  • 1/2 lb (227g) provolone

  • 1 lb (454g) sliced mortadella

  • 1 jar pickled banana peppers

  • 1 head iceberg lettuce, thinly sliced


INSTRUCTIONS:

  1. Place basil, pine nuts, garlic, Parmigiano Reggiano, and water; blend that on high speed until smooth (you can add more water if necessary) and stream in olive oil.

  2. Pour that in a bowl with mayo, stir to combine, season to taste with salt and lemon juice as needed.

  3. Cut your ciabattas in half, lengthwise, and sauce them on both sides generously. Stack in this order starting on the bottom bun, mozzarella, salami, mortadella, lettuce, and pickled banana peppers to your desire.

  4. Crown your king sandwich and cut it into as many little segments as you want.

This IS the BEST SANDWICH ever! It was a hit on Super Bowl Sunday! One little addition to the recipe, I put the meat with the cheese under the broiler before I slid them on to the toasted Ciabatta. The dressing makes about 2 cups so you have leftovers for salad or a lot more sandwiches. :)))😁
