Ingredients:

  • 8 oz (227g) large elbow macaroni 
  • 2 cups (454g) low-fat cottage cheese
  • 2 oz (57g) cheddar cheese, grated 
  • 1 tsp (3g) garlic powder
  • 1 tsp (3g) MSG
  • 1.5 tsp (5g) fine sea salt
  • 24 oz (680g), boneless skinless chicken breast, *optional *see Notes*

Directions

Directions: 

  1. In a large pot of salted boiling water, cook the pasta according to package instructions, reserving about 1 cup of pasta water for later use. 
  2. Blend the cottage cheese in a food processor, or blender, on high until as smooth as possible. Transfer to a medium sized saucepan set over medium low heat then add pasta water until it reaches your desired consistency. Add in the cheddar, garlic powder, MSG, and salt and stir until melted and incorporated. Bring the mixture to a light simmer. 
  3. Transfer the pasta into the sauce and toss to coat. Serve and enjoy!

*Notes:

  • You can serve the mac n cheese on its own or include 6 oz of chicken breast, cooked however you like, per serving which will change the macronutrients depending on preparation.
